Thaumatin is a kind of sweetner, which is derived from the fruit of the katemfe plant (Thaumatococcus daniellii), which is native to West Africa. . It’s a non-nutrition sweetner with extremely high sweetness, one of the most famous sweetner in the production.
Thaumatin also be used in beverage and foods as the substitution as sugar, without no calories. And It is about 200 times sweeter than sucrose, only a very small amount can make the same desired level of sweetness.
